What to Eat for Breakfast? Squirrel Cakes?


I am not creative with breakfast dishes especially weekday mornings before coffee. I find breakfast can be ho-hum, so I don’t eat breakfast weekdays.  Then, I stumbled on “What Should I Eat for Breakfast Today.” http://whatshouldieatforbreakfasttoday.com/


A lovely, elegant looking site created by Marta Greber. Her love of breakfast will benefit the ho-hum-ness anyone feels about this meal. “I love to eat breakfast in the morning and it has to be a quality time. I also think that it’s the most important meal of a day. It’s so much nicer to start a day early in the morning and spend some time with people you love or with a good magazine and some music. So, let’s breakfast!”

You can browse Options: Weekend breakfasts, Light, Heavier but delicious, Vegan, Meatless, Sweet, Savoury, Hot, Cold, Fruity, Veggies, With Eggs, and Drinks. The photos are sumptuous and the bright and clean layout is welcoming even for the non-morning person and the morning person who does not eat breakfast welcoming.

Avocado toast with goat cheese and tomato is not anything I would immediately come up with, but it looks wonderful and so simple. There is also a side section with Pancakes & Crepes, In Bowls & Jars, Breads & Cakes, and Sandwiches. So much to explore for breakfast!

Miss Greber also has sections on Eat Berlin and Eat Barcelona. But I focused on all the breakfast selections and recipes and not to mention, Archives!

I miss the comfort of breakfast during the week and this site reminded me of all the wonderful options. How a good breakfast (even if only on the weekend) can be good family time. Growing up, breakfast was cereal in the mornings and on our own. Weekends were for the BIG breakfast. My dad would make what he called squirrel cakes. No squirrels were harmed in the making of these– Unlike other dad recipes. They were just mini pancakes, but I thought they were the best thing ever. It didn’t matter that dad had cigarette lit next to the pan or balanced it on the edge of counter or let it dangle from his bottom lip as he cooked. No. It was all good, even for breakfast.
